Meadowsweet herb was employed in traditional European medicine, likely due to its natural plant compounds called salicylates—the historic inspiration for aspirin—which help reduce swelling and mild pain. It was typically used to flavor wines, meads, and vinegars. Its taste is fresh and green with subtle cucumber or watermelon hints, though older leaves can carry a sharp, medicinal or antiseptic edge. The herb can be infused into milk, cream, custards, panna cotta, and ice cream, or brewed into teas, syrups, cordials, and mead. It also is used as a liquid extract.
