Chai tea
This black tea blend contains cinnamon, ginger, green cardamom pods, allspice, cloves, black pepper, and black tea leaves. To make an 8 oz. cup, use 1 – 2 tsp of tea. Steep for 3 to 5 minutes in boiling water/milk (212°F), strain, sweeten, then enjoy!

Chai Masala, caffeine-free
This herb and spice blend consists of cinnamon, cardamom, ginger, and black pepper. There are no tea leaves (Camellia sinensis) so there is no caffeine. Simmer with 50/50 milk and water, strain, sweeten to taste, then enjoy a real treat!

Chai Spice, caffeine-free
This herb and spice blend contains cinnamon, ginger, cardamom, allspice, and black pepper. Since it contains no black tea (Camellia sinensis), it has no caffeine. If you want caffeine, boil this blend in milk or water for a few minutes, then add black tea leaves and simmer for 2 more minutes. Strain and sweeten.

Try the following recipe:

Bring the following to a boil:
3 cups water
5 green cardamom pods
1/2 tsp. cinnamon powder
3 pieces of star anise
2 tsp fennel seed
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger (or 1/2 tbsp. cut and sifted)
1/4 tsp. ground cloves (or 1 tbsp. whole cloves)
8 black peppercorns
Add 1 and 1/2 cups of milk and return to a boil
Add 6 tsp. Assam black tea and simmer for 2 minutes
Strain, sweeten, and enjoy!
